This week we bring you a very simple, light, tasty and, moreover, vegetarian recipe! The base of the recipe is the aubergine, accompanied by an orgnic avocado and yoghurt sauce, which is delicious!
It’s a great idea to make the most of your 9 or 4 kg Organic Avocado-Lemon Box.
Ingredients for one person
- 1 aubergine
- 1 organic avocado
- the juice of half an organic lemon
- 2 natural yoghurts (without sugar)
- A little oregano
- Extra virgin olive oil
- A pinch of salt
- Peppermint and paprika for garnish
For the aubergine:
Cut the aubergine into thick slices. Cut a piece of aluminium foil and sprinkle with olive oil, salt and cumin. Place the aubergine slices on top and add another drizzle of olive oil, salt and cumin. Cover with another piece of aluminium foil and form a “little packet”.
Put it in a frying pan over high heat and let it cook on one side for about 5 minutes. Turn over and leave for another 5 minutes. Remove from the pan and set aside.
For the yoghurt and organic avocado sauce:
Put the two natural yoghurts in a bowl and add oregano, a good splash of olive oil, salt, the juice of half a lemon and the finely chopped avocado. Stir everything well until you have a light green sauce.
Arrange the aubergine on a plate (be careful, it can burn!) and add the sauce on top. Garnish with a little sweet paprika and a mint leaf.
